Culinary Director

The Disneyland Resort Food & Beverage team is seeking a Culinary Director to lead the integration team which focuses on creative concept development, standards, metrics and tools for future food and beverage products and experiences. This culinary leader will lead the development cycle by partnering closely with culinary subject matter experts, operations and stakeholders. Responsibilities

  • Facilitate dialogue and decision making that effectively balances operational needs and inputs with the creative strategy
  • Build effective partnerships across the broader organization to leverage efforts and drive growth
  • Provide leadership, development, support and motivation for salaried and hourly cast
  • Oversee concept proposals, project plans and timelines through effective influence and collaboration with partners
  • Identify, drive and monitor consistent culinary and beverage standards
  • Oversee creation of new product and presentations, development of menu changes and seasonality presentations, incorporating best-in-class ideas, cultural influences and maintaining world-class quality and innovation
  • Conduct taste tests, menu reviews and solicit guest and cast feedback to ensure the highest quality and unique culinary experiences
  • Enable financial goals (or objectives or success) by providing standards, metrics and tools to achieve food and beverage cost of sales, including inventory processes
  • Ensure adherence to compliance standards of the Walt Disney Parks and Resorts
  • Responsible for effective communication and collaboration with direct reports, peers, vendors, and executives
  • Enable creation of competitive food and beverage offerings that advance the brand and drive business results
  • Design and oversee logistics planning and efficient processes

Basic Qualifications

  • Ability to gather and organize information relevant to a long-range goal or vision
  • Proven business acumen with strong financial and analytical skills
  • Proven leadership experience focused on partnering, influencing, educating, mentoring and developing others
  • Demonstrated passion and commitment to diversity and inclusion, including inviting diverse perspectives, fostering an inclusive work environment and supporting workforce diversity
  • Ability to lead a multifunctional business, balance and prioritize multiple projects in a rapidly changing environment, and demonstrate integration within and across all lines of business
  • Proven experience in influencing operational partners and stakeholders at all levels
  • Demonstrated strong organizational, planning and time management skills
  • Proven ability to communicate across all levels of the organization (oral and written)

Preferred Qualifications

  • Ability to work in a dynamic team environment with a commitment to excellence

Required Education

  • Associates Degree in Culinary Arts or formal Apprenticeship Program or equivalent
  • Minimum seven years of culinary experience leading a culinary management team including diverse, high volume operations
  • Extensive knowledge of food and beverage industry trends in a variety of styles of service, including quick service and fine dining

Preferred Education

  • Advanced Degree in Culinary Arts/ Bachelor’s or Master’s Degree in Business Administration
  • Advanced training in food and beverage
  • Food Safety Certification
